Marshmallow Fudge!

Here we go! a quick and easy treat for your mum on Mothers Day! Make these and wrap them up in pretty cellophane for a special treat!

  • 450g (1lb) Icing Sugar
  • 100g (4oz) white marshmallows
  • 100g (4oz) unsalted butter
  • 2 tablespoons of milk
  • Half a teaspoon of vanilla essence
  • 18cm (7in) shallow square cake tin
  1. Take some greaseproof paper. Lay the tin on top and draw around with a pencil. Then cut out the square
  2. Use cooking oil to grease the inside of the tin. Place the square of greaseproof paper inside the tin and grease that too. (a papertowel is best for this)
  3. Sift the icing sugar into a large bowl and make a well in the middle with a spoon.
  4. Cut the marshmallow into small pieces and put them into a small saucepan with the milk, butter and vanilla essence.
  5. Gently heat the pan on a low heat until all the ingredients have melted. Stir every now and again.
  6. Pour the mixture into the well that you made in the icing sugar and stir everything together until it is smooth.
  7. Put all the mixture into the tin and use a spoon to push it into the corners.
  8. Leave it to chill in the fridge for 3 hours.
  9. Turn out the fudge onto a choping board and peel off the greaseproof paper.
    Cut the fudge into small squares and then put back into the fridge to harden.
