Back to school!

I apoligise for not being about very much over the summer! The children are back at school now! phew! My youngest son has started 'big' school this morning - and I dont mind admitting I shed a little tear this morning when he had his new uniform on! I can't wait to go and fetch him! As a treat, me and my youngest are going to bake some gingerbread men and decorate them to look like Oliver in his school uniform!

Whats in Season?

Asparagus!


Its prime asparagus season here in the UK! Its a great source of folic acid and vitamin C - and its also high in fibre! A great super food!


The shoots should be firm and straight and have tightly furled tips.


Steam them for 4-5 minutes serve! simple! And toddlers will love them as an alternative to toast soldiers with a boiled egg!

Fairy 'Make Story Time Special' Competition

Here at Pinkfairycake we are supporting Fairys 'Make Story Time Special' initiative, encouraging parents to spend more time reading with their children.

They are offering free Kipper Books on special packs of Fairy Non Bio and Fairy Fabric Softener and are also running a competition:

Mushroom & Bacon Pasta

  • knob of butter
  • Chopped clove of garlic
  • 1 small onion chopped finely
  • 150g of button mushrooms finely sliced
  • 150g smoked ham cut into small squares
  • 1 tin of chopped tomatoes
  • 1 tablespoon of chopped parsley
  • Cooked pasta
  1. Melt the butter in a saucepan over a low heat
  2. Add the garlic and cook for a minute whilst stirring
  3. Add the onions and cook for about 10 minutes
  4. add the mushrooms and cook for another 10 minutes
  5. Add the parsley, ham and tomatoes
  6. Let the sauce cook for about 30 minutes
  7. Serve over pasta

Cupcake Gifts for Mothers Day!

Marshmallow Fudge!

Here we go! a quick and easy treat for your mum on Mothers Day! Make these and wrap them up in pretty cellophane for a special treat!

  • 450g (1lb) Icing Sugar
  • 100g (4oz) white marshmallows
  • 100g (4oz) unsalted butter
  • 2 tablespoons of milk
  • Half a teaspoon of vanilla essence
  • 18cm (7in) shallow square cake tin
  1. Take some greaseproof paper. Lay the tin on top and draw around with a pencil. Then cut out the square
  2. Use cooking oil to grease the inside of the tin. Place the square of greaseproof paper inside the tin and grease that too. (a papertowel is best for this)
  3. Sift the icing sugar into a large bowl and make a well in the middle with a spoon.
  4. Cut the marshmallow into small pieces and put them into a small saucepan with the milk, butter and vanilla essence.
  5. Gently heat the pan on a low heat until all the ingredients have melted. Stir every now and again.
  6. Pour the mixture into the well that you made in the icing sugar and stir everything together until it is smooth.
  7. Put all the mixture into the tin and use a spoon to push it into the corners.
  8. Leave it to chill in the fridge for 3 hours.
  9. Turn out the fudge onto a choping board and peel off the greaseproof paper.
    Cut the fudge into small squares and then put back into the fridge to harden.
