We've been baking cupcakes to sell at my sons school tomorrow for Comic Relief! He said he wanted red nose cakes! So here they are...

Its Pancake Day!

Pancakes!

Preparation time less than 30 mins
Cooking time less than 10 mins

Ingredients

For the pancake mixture:

110g/4oz plain flour, sifted

pinch of salt

2 eggs

200ml/7fl oz milk mixed with 75ml/3fl oz water

50g/2oz butter

1. Sift the flour and salt into a large mixing bowl. Make a well in the centre of the flour and break the eggs into it. Then begin whisking the eggs - any sort of whisk or even a fork will do - making sure you get any bits of flour from around the edge of the bowl as you do it.

Next gradually add small quantities of the milk and water mixture, still whisking (don't worry about any lumps as they will eventually disappear as you whisk).

When all the liquid has been added, use a rubber spatula to scrape any bits of flour from around the edge into the centre, then whisk once more until the batter is smooth.

Melt the 50g/2oz of butter in a pan. Spoon 2 tbsp of it into the batter and whisk it in, then pour the rest into a bowl and use it to lubricate the pan

Get the pan really hot then turn down to medium. As soon as the batter hits the hot pan, tip it around from side to side to get the base evenly coated with batter. It should take only half a minute or so to cook; you can lift the edge with a palette knife to see if it's tinged gold as it should be. Flip the pancake over with a pan slice or palette knife - the other side will need a few seconds only - then simply slide it out of the pan onto a plate.

serve and enjoy!

Why not add some fruit to them?

Try them with:

Sliced kiwi and strawberry with a dollop of ice cream

Wrap up a banana with a pancake and slice into small pieces

PEARS!!!

YUM! January is the season for pears! Pears are a great source of fibre and are also a good source of vitamin B2, C, E, copper, and potassium. They are often recommended by health care practitioners as a hypoallergenic fruit that is high in fibre. They are less likely to produce an adverse response than other fruits. Pears are often recommended as a safe fruit to introduce to infants.

Why not add some pear to a simple jelly! A quick and easy way to eat another 1 of your 5 portions a day!

Christmas and New Year have been hectic at the Pinkfairycake household! There is soooo much cooking and baking to do! I love it! We've had a production line of mincepies on the go since the beginning of December! They made lovely handmade gifts from the kiddies. Decorated and wrapped in pretty cellophane - a quick, easy (and cheap) way to brighten anyones day.

I dont normally make these, that way I cant break them...but this year Im making a conscious effort to keep my blog up to date! lol

Back to school!

I apoligise for not being about very much over the summer! The children are back at school now! phew! My youngest son has started 'big' school this morning - and I dont mind admitting I shed a little tear this morning when he had his new uniform on! I can't wait to go and fetch him! As a treat, me and my youngest are going to bake some gingerbread men and decorate them to look like Oliver in his school uniform!

Asparagus!

Its prime asparagus season here in the UK! Its a great source of folic acid and vitamin C - and its also high in fibre! A great super food!

The shoots should be firm and straight and have tightly furled tips.

Steam them for 4-5 minutes serve! simple! And toddlers will love them as an alternative to toast soldiers with a boiled egg!

Mushroom & Bacon Pasta

knob of butter
Chopped clove of garlic
1 small onion chopped finely
150g of button mushrooms finely sliced
150g smoked ham cut into small squares
1 tin of chopped tomatoes
1 tablespoon of chopped parsley
Cooked pasta

Melt the butter in a saucepan over a low heat
Add the garlic and cook for a minute whilst stirring
Add the onions and cook for about 10 minutes
add the mushrooms and cook for another 10 minutes
Add the parsley, ham and tomatoes
Let the sauce cook for about 30 minutes
Serve over pasta

Marshmallow Fudge!

Here we go! a quick and easy treat for your mum on Mothers Day! Make these and wrap them up in pretty cellophane for a special treat!

450g (1lb) Icing Sugar
100g (4oz) white marshmallows
100g (4oz) unsalted butter
2 tablespoons of milk
Half a teaspoon of vanilla essence
18cm (7in) shallow square cake tin

Take some greaseproof paper. Lay the tin on top and draw around with a pencil. Then cut out the square
Use cooking oil to grease the inside of the tin. Place the square of greaseproof paper inside the tin and grease that too. (a papertowel is best for this)
Sift the icing sugar into a large bowl and make a well in the middle with a spoon.
Cut the marshmallow into small pieces and put them into a small saucepan with the milk, butter and vanilla essence.
Gently heat the pan on a low heat until all the ingredients have melted. Stir every now and again.
Pour the mixture into the well that you made in the icing sugar and stir everything together until it is smooth.
Put all the mixture into the tin and use a spoon to push it into the corners.
Leave it to chill in the fridge for 3 hours.
Turn out the fudge onto a choping board and peel off the greaseproof paper.
Cut the fudge into small squares and then put back into the fridge to harden.

Well Christmas is over for another year! I hope that everyone had a great time! Our Christmas Lunch was a major success! I cooked for 7, including the children and it was completely stress-free! My son prepared the prawn cocktails and was really pleased with himself! All he needed was a plastic serated knife for the lettuce and a bowl to mix the prawns and sauce. Then he put the lettuce into the dishes and topped it with the prawn mixture! Not bad for a 3 year old and saved me a job! Maybe next year he will move on to the main course! ;0)

Easy Leek and Potato Soup!

This recipe is so quick and easy! Perfect for when the kids want to 'help'!

Leek and Potato Soup

250g (9oz) Potatoes
2 Leeks (medium size)
25g (1oz) Butter
1 tablespoon of oil
1 vegetable stock cube
dried mixed herbs
300ml (1/2 pint of milk)
salt and black pepper

Peel the potatoes and cut them into small pieces. Put into a large saucepan.
Cut the roots and the dark green leaves off the leeks and take off the outer layer. Wash the leeks thouroughly under running water.
slice the leeks into 1cm pieces then add the leeks, butter and oil to the potatoes and stir well.
Turn on the heat and melt the butter. When the butter has melted and you can hear it sizzle then put on the lid and turn the heat down low.
Let the vegetables cook for around 10 minutes.
Boil some water. Put the stock cube into a measuring jug and pur in 900ml (1 1/2 pints) of the water and stir well.
When the vegetables are cooked, pur in the stock. Add a pinch of the mixed herbs, the milk and a little salt and pepper.
Turn up the heat and bring to the boil. Then turn the heat down low again so that the soup is gently bubbling.
Let the soup cook for about another 15 minutes then serve straight away into bowls.

Delicious served with warm bread rolls!

is difficult at the best of times! But when the children are getting overly excited about the arrival of Santa, and the weather too bad to go out and burn off some energy, what do you do? We made cookies for the tree yesterday, although we are going to have to make some more as these didnt actually get on the tree before they were eaten!

Christmas cutters are great at this time of year. I use them to make interesting sandwiches and toast! It all adds the the festivities!

Craft Fair Success!

We attended our first craft fair last weekend at Trentham Gardens, Stoke On Trent. It was a great success and people were really interested in Pinkfairycake! Its been raining non stop and we cant go outside so we decided we would bake some fairycakes today! We put down a splashmat on the floor, I weighed out the ingredients and my 3 year old son, Oliver, helped mix them altogether. We had great fun! Olivers favourite part was sifting the flour.

He was so excited to see the cakes come out of the oven, that he sat for 20 minutes infront of the oven door!

We got them out, and while they were cooling we mixed some icing sugar and food colouring into some small bowls. By this point, my 1 year old daughter Maisie had woken from her nap so she joined us for the decorating.

And the finished product! (Minus a few that we had to taste - naturally!)

WOW! Have you ever come across a product that is so amazing that it instantly makes your life so much better! Well I have! Silicone bakeware! Its just so amazing! Firstly, not only can it be used in the oven, but its also suitable for the freezer, microwave, and more importantly, the dishwasher! And for those who have overenthusiastic children....silicone bakeware is also virtually indestructible! It can be compressed into spaces and doesn't lose its shape.
And if you think it cant get any better....its non stick, so cakes and muffins come out with ease, just peel back the silicone. It can withstand temperatures up to 500ºF, (although am hoping I never get to test this out!) and will not retain the odour of baked goods – so no nasty cooking smells left behind!

My kids love cooking....or should I say 'helping' out in the kitchen! Cooking is something that we all have to do everyday - so why not let the kids help out? I bet the first thing that comes to mind is 'MESS'.....and then 'safety'...and a whole list of other reasons why you wouldn't want you little ones in the kitchen. I wonder how many people actually cook with their children, and if not, why not?

After asking around, most of my friends don't encourage it, as they cant stand the mess, or haven't go the time, or can ever think of what to cook, or never have the right ingredients to hand. I was also surprised by how many people do actually actively cook with their children.

And so then came my inspiration. What if there was a point of reference for mums to go to that had a whole range of information based on children's cooking. A place where they could get simple, quick and easy recipes. A place where they could pick something to cook and be certain that they would already have the ingredients required. A place where they could even buy cooking/baking equipment especially for children.

Well now they can! Pinkfairycake.com is an online Kids cookery store that contains all the ingredients for healthy, happy children. Just add FUN.

We are hoping to get the site up and running sometime in July!
